Ποιο κρασί είναι τυπικό και ποιο όχι;

Είχαμε πρόσφατα κατά τη διάρκεια μίας τυφλής δοκιμής των 10 πρώτων κρασιών του 50 Great Greek Wines μία συζήτηση για το τι είναι τυπικό ή όχι. To κρασί που προκάλεσε τη συζήτηση ήταν ένα Αγιωργίτικο χωρίς βαρέλι με την έννοια ίσως ότι μία πιο γνώριμη άρα και πιο τυπική Νεμέα είναι αυτή με βαρέλι. Καταρχάς ας εξηγήσουμε τι εννοούμε με τον όρο τυπικότητα (typicality). Σε μία πρώτη ανάγνωση τυπικά είναι αυτά τα χαρακτηριστικά που περιμένουμε και που σχετίζονται με την περιοχή και την καθαρή έκφραση της ποικιλίας. Δηλαδή μία τυπική Σαντορίνη είναι αλμυρή, με οξύτητα και δύναμη. Μία Μαντινεία είναι ένα ανθικό, με οξύτητα και χαμηλό αλκοόλ λευκό κρασί. Και αν είναι ροζέ μήπως τότε δεν είναι τυπικό; Kρατήστε την απάντηση για το τέλος.
